Broccoli Rice Casserole

This Broccoli Rice Casserole is a comforting, crowd-pleasing classic that's easy to prepare and full of flavor. Made with a blend of tender broccoli, savory onion, creamy mushroom soup, and your choice of Cheez Whiz or shredded cheddar, it’s the perfect side dish for family dinners, potlucks, or holiday gatherings. The Garden Medley Dip Mix adds a unique twist that enhances the flavor without extra effort. Just mix, bake, and enjoy a warm, cheesy casserole that everyone will love!

Ingredients:

  • 1 packet Garden Medley Dip Mix (dry)
  • 1 pkg frozen broccoli pieces (16-20 oz.)
  • 1 stick butter
  • 1 (10.75 oz.) can cream of mushroom soup
  • 1/2 cup onion, chopped (optional)
  • 2 cups cooked rice
  • 1 ( 8 oz.) jar Cheez Whiz or 2 cups shredded cheddar cheese
  • Crushed butter crackers (optional)

Directions:

  1. Preheat oven to 350 degrees. Grease a glass 11x17 casserole dish with non-stick cooking spray.
  2. Combine Garden Medley Dip Mix, broccoli, butter, and onion in a saucepan on medium heat until the butter melts.
  3. Add remaining ingredients and mix well.
  4. Place the mixture in the casserole dish, top with crushed butter crackers if desired, and bake for 1 hour.
